Roast at 425°F for 1 hour to 1 hour 15 minutes until internal temp in the thickest part of the thigh reaches 165°F. Season generously inside and out. Rest 10–15 minutes before carving. The carcass makes excellent stock.
Will last 1-2 days in the fridge once opened. Will last up to 6 months frozen.
