Rotisserie: 20 minutes per pound at medium heat. Oven roast: season generously inside and out, roast at 425°F for 1 hour 15 minutes to 1 hour 30 minutes until internal temp in the thigh reaches 165°F. Also great grilled, pan-seared in pieces, or sliced for stir-fry and salads.
Rest 15 minutes before carving. The carcass makes excellent stock.
Will last 1-2 days in the fridge once opened. Will last up to 6 months frozen.
