Sear in a hot cast iron for 2 minutes per side, then finish in a 400°F oven for 15–18 minutes to 145°F internal. Rest 5 minutes before slicing. A fast weeknight dinner that looks like you tried harder than you did.
Will last 2-3 days in the fridge when fresh or once thawed. Will last up to 6 months frozen.
