Regular cut, about 1/16 inch thick, from the beef belly. Cured and smoked the same way pork bacon is. Rich flavor, slightly firmer texture.

Cook in a skillet over medium heat. It renders a little differently than pork — less fat — so watch it closely. Great for breakfast, crumbled over salads, or layered into a burger.
Will last 5-7 days in the fridge once opened. Will last up to 2 months frozen.
